1 (18.25 ounce) package of chocolate cake mix 1-quart mint chocolate chip ice cream softened

Preheat the oven to 350 degrees F (175 degrees C).  Grease a cookie sheet. Mix cake mix according to package directions, omitting the eggs.   Drop by large spoonfuls onto a cookie sheet, mixture should be about the consistency of brownie batter. Bake 15 minutes in the preheated oven, or until cookies spring back when touched lightly in the center. Cool completely. To assemble, put a scoop of softened ice cream in the center of a  cookie.  Top with a similarly-sized cookie, wrap in plastic wrap and gently press down to flatten out the ice cream scoop.  Freeze until serving.

210 g (1½ cup) flour
110g (½ cup) softened butter
pinch of salt
¼ teaspoon baking powder
150 g (¾ cup) sugar
1 egg
½ teaspoon vanilla
⅓ cup cocoa powder
vanilla ice cream

Beat the butter with the sugar until the mixture becomes pale in color.
Add the egg and vanilla and mix well.
Add cocoa powder and whisk until blended.
In another bowl, mix the flour, salt and baking powder, add this mixture to the chocolate mixture, and mix until the ingredients are mixed.
Transfer the dough to a work surface that has been sprinkled with flour, and roll it out to a thickness of 3 mm.
Cut the biscuit dough into circles or rectangles, and bake for 10 minutes in a hot oven at 170 ° C. Leave the biscuits to cool for 2 minutes, then transfer them to a wire rack to cool completely.
Cut the ice cream into the same shape as the biscuit, stuff it between two biscuits, and freeze it immediately.
